Molasses Crinkle Cookies


I’ve been so busy these last few months it’s been really hard to find time to post on here but I really miss it and I promise I’ll be writing more now! Since I’m home for winter break, I have a lot of time to cook and bake and share the deliciousness with you lovely readers! Molasses cookies have always been one of my favorites but I had never made them myself. After playing with the recipe and dozens of cookies later, I finally got them just right. Anyone will love these, your kids, your neighbors, even Santa. Pair these winter favorites with a tall glass of eggnog and you’re set.

-2 cups of all purpose flour
-1/4 cup of butter or vegan substitute
-1 cup of sugar
-1 egg
-2 teaspoons of baking soda
-1 teaspoon of cinnamon
-1/2 teaspoon of salt
-1/4 teaspoon of ground cloves
-1/4 teaspoon of ground ginger
-1/2 cup crystallized ginger, finely chopped


Beat together the soft butter and sugar until creamy, add in egg and molasses. In a separate bowl, whisk together flour, baking soda, salt, cloves and finger. Once it’s well blended, add in the crystallized ginger. Blend the dry mixture into the butter until it’s all incorporated. Chill in the fridge for 30 minutes-an hour. Preheat the oven to 375 and coat baking sheets with cooking spray. Once the dough is chilled, roll into one inch balls and drop into a small bowl of sugar. Place on the baking sheet and slightly press down on each ball with a spoon. Bake for 8-10 minutes or until the tops begin to crinkle. Enjoy!
