Grilled Peanut Butter, Cream Cheese and Banana Sandwich

I’ve been so crazy busy the past couple weeks with school I’ve hardly gotten a chance to post! And to be honest, I haven’t been making anything spectacular since I’ve been in my new apartment. I’m still getting the hang of grocery shopping for just me and it’s hard to find the time or motivation to make fancy meals when I’ve got about 12000 other things going on. So let me take a spare moment to share with you something I have been having a lot of! These sandwiches are my new obsession and perfect for people like me, in a rush, minimal groceries in the fridge, and craving something delicious. I’ve actually made this sandwich 3 out of the past 5 days. It’s crazy. I included normal cream cheese in he the recipe since that’s what most people prefer but I use vegan cream cheese just because of my lactose intolerance so vegans don’t be fooled, you too can enjoy this warm, oozing goodness.

Ingredients:
-2 slices of bread (I use whole wheat)
-One ripe banana
-2 tablespoons of cream cheese of choice
-1-2 tablespoons of peanut butter
-Oil of choice

Directions:
Slater the cream cheese on one slice of bread and the peanut butter on the other than slice the bananas into about 1/2 inch pieces and squeeze as many as you can between the slices of bread. Lightly grease or butter your pan then grill the sandwich on medium high heat for about 1-2 minutes on each side or until golden brown. Enjoy!
