It’s an age old question, if you could only eat one thing and nothing else for the rest of your life, what would it be? It might not be your favorite, most exquisite meal but something you could never grow tired of. For me, it would have to be avocado and tomato on toast. It’s so easy, so simple, yet so flavorful.
Another wonderful thing about avocado and tomato toast is that you can have it at any time of the day or for any meal. Since it’s toast it’s completely acceptable to eat it first thing in the morning for breakfast but it also makes a filling lunch. I’ve even eaten it for dinner on a busy night with some homemade fries or a side of hummus.
-1 piece of bread of choice (I used ezekiel)
-1/2 avocado, smashed
-1 tomato cut into slices or about 4-5 cherry tomatoes
-Salt and pepper to taste
Toast the bread until it’s as done as you like it. Meanwhile, smash the avocado in a bowl until its chunky but don’t over smash or it will get almost liquid-y. Slather the avocado on the bread and top with tomato, salt and pepper. Enjoy!
