Sweet Potato Wedges (Vegan)

I think it’s pretty obvious by now that I have a borderline obsession with sweet potatoes. There’s just so many ways you can make delicious meals and snacks out of them! These wedge fries are one of the simplest ways to cook sweet potatoes but that doesn’t mean they’re any less delicious than a fancy sweet potato meal. Plus they’re a great side to a huge variety of dinners or lunches. But I think they’re perfect all on their own! I season mine with sea salt, black pepper, cumin and paprika but you could garnish these with so many different spices. I also suggest a garlic and sea salt combination.


-One large sweet potato
-One tablespoon of olive oil
-Sea salt
-Black pepper
-Paprika (all spices to taste)

Begin by cutting the potato into halves and then into fourths, finally slicing smaller wedges (the thinner the wedges the crispier they’ll be) Then line them on a baking sheet with tin foil and drizzle with olive oil. Sprinkle your choice of spices and place in the oven pre heated to 425 degrees. After 20 minutes toss the wedges and add olive oil and spices as needed. Let them sit in the oven for another 15-20 minutes depending on how done you want them. Enjoy!
