Sweet Potato Donuts (Vegan)


Didn’t think sweet potatoes could get any sweeter? Think again! These sweet treats are the best of both worlds, hearty vegetables turned into a delicious dessert. They’re perfect for breakfast or an after dinner snack, but I could probably eat these donuts for any meal.

-2 sweet potatoes
-1/3 cup of whole wheat flour
-1 teaspoon of baking soda
-dash of salt
-cinnamon to taste

Dice and cook the potatoes until they’re soft enough to mash (I steamed mine) Combine the mashed potatoes and the rest of ingredients and form into balls or place in a donut tray and bake at 410 degrees for about 15 minutes. I topped mine with a stevia and water glaze and more cinnamon. Enjoy!
