Banana Blueberry Baked Oatmeal

Technically I’m on summer break but this morning it felt like anything but.  It was cold and rainy, all I wanted to do was curl up on the couch with a book and some tea.  So here’s the perfect breakfast recipe for those gloomy mornings.  If you overload on the blueberries like I do, it’s practically a cobbler.  Just look at that warm, gooey, deliciousness.  Enjoy!

Ingredients:

-1/2 cup of oatmeal

-1/2 cup of almond milk

-1 banana

-1/4 cup blueberries

-1/2 tsp baking powder

-1/4 tsp baking soda

-1 packet of stevia (optional)

Directions:

Preheat oven to 350 degrees and then mix the oats with the almond milk and let soak.  Meanwhile, mashup the banana, leaving a few slices for decoration. Then, pour the banana mixture in with the oats and milk and add baking powder, baking soda, stevia and blueberries.  Finally, top it with the remaining fruit for decoration and stick in in the oven for 20-25 minutes or until the top becomes perfectly golden browned.
